Dimboola's Victoria Hotel head chef Fabian Lauricella did just that at the Victoria Police Naidoc Awards held at Horsham Church of Christ last week and attended by police and guests from across the state.

Mr Lauricella received many accolades for the menu, which included saltbush olive canapes, wattleseed damper, arancini balls with toppings of bush-tomato chutney, lemon-myrtle squid and pork belly with wattleseed pumpkin puree.

Chief Commissioner Patton, in Horsham to present six prestigious awards, was heard to comment on the quality fingerfood lunch provided.
